Tomato Basil Crostini Appetizer



12 Slices French bread
2 Tbs         Ex-virgin olive
1 Clove       Garlic
1 Large Tomato
        Basil
2 Clove Garlic
        Salt&pepper
2 Tbs         Parmesan cheese


Preparation and cooking method:
1.     Brush French bread slices with 1 tablespoon oil, rub with the halved garlic cloves. Broil on one side only until lightly toasted. Mince the halved cloves, add to a bowl with chopped tomato, basil, the 2 minced garlic cloves, the remaining 1 tablespoon extra-virgin olive oil, salt and pepper; mix well. Spread mixture evenly on the toasted side of bread slices, top with grated cheese and serve.
